This recipe has super food nutrition not only from the fruit, but the medicinal spices which lower blood sugar, boost immunity and good digestion. 

Yield: 6 servings

Cooking Time: 45 minutes (plus additional 5-10 minutes for broiling)

ingredients

  • 7-10 organic Fuji apples, chopped

  • 1/4 cup honey from the farmer’s market (optional)

  • 1 cup coconut water

  • Juice of a large lemon

  • 1 tsp grated ginger

  • 1 tbsp cinnamon

TOPPING (OPTIONAL)

  • 1 cup whole oats

  • 1 cup chopped nuts

  • 1 cup almond meal

  • 1-2 egg whites

  • 5 tbsp organic butter or 3-4 tbsp coconut oil

  • 1 tsp vanilla

  • 1/2 cup monkfruit (if you prefer a sugar substitute)

Method

  1. Mix all the wet ingredients (chopped apples, honey, coconut water, lemon juice, grated ginger, and cinnamon) together in a glass bowl. Marinate in the fridge; the longer, the better and sweeter. If in a hurry, marinate for as long as possible after chopping the fruit.

  2. If using the optional topping, mix together whole oats, chopped nuts, almond meal, egg whites, organic butter or coconut oil, vanilla, and monkfruit. Set aside.

  3. Preheat the oven to 350°F (175°C).

  4. Lightly grease a baking dish with coconut oil.

  5. Cover the bottom of the glass baking dish with the marinated fruit mixture.

  6. Bake for 45 minutes.

  7. After 45 minutes, add the crumble topping evenly over the fruit mixture.

  8. Place the dish on broil for an additional 5-10 minutes or until the topping is golden brown and crisp.

  9. Remove from the oven, let it cool slightly, and serve.
